I took quite some time to decide which herb I would use for this assignment. Some of the deciding issues were:
1. I was keen on Ginseng but could not find product at Dischem.
2. I was also keen on Turmeric and actually made an extract but decided not to submit it due to so little information available from the the 3 course recommended publications as well as a question mark relating to the solubility of turmeric root powder in water and also little of it is absorbed in the digestive system.
3. My other choice was Echinacea and I did make up an extract, BUT the only available species of the plant was purpurea and King’s American Dispensatory makes it quite clear that this is an entirely different plant to Echinacea angustifolia
4. Finally, I chose Liquorice root for its availability and also its very long medicinal history (since 300BC) and it’s wide use on the Continent and the far east having a strong respiratory and immune boosting ability as a Tonic (Superior Herb).

Working with herbs as medicine as well as for cooking is a whole new world for me
