Forgetting that tastes differ. I get so excited about a new recipeand think that its going to be a hit but I do need to be aware of texture of the meals and moving my family forward using small increments
I’ve definitely added certain herbs and spices too early and then by the time the dish is ready all their flavour has gone. Learning when to add them I think will really elevate my cooking
I have definitely over done it on spices before! Ended up with quite a spicy dish! WAY too much cayenne! Learned my lesson right then and there, you can always add more, but ya can’t take it out!
I am blessed to have grown up with a father who embraced the beginning of the organic gardening trend in the 70’s, a Nana who had emigrated from Italy only 30yrs before I was born, and friends from a very multi-cultural community. Because of these wonderful influences and experiences, I was exposed to spices and fresh herbs, vibrant flavors, and learning to eat and cook fresh, healthy, flavorful foods from an early age. I didn’t know it as a child/teen, but I was fortunate to have learned all of the advantages to herb and spice usage and sound cooking techniques from the beginning.
All of them, grew up in the garden so did not learn to cook, my deceased husban did all the cooking. Although I had great success with my own chili sauces and flavouring them with herbs, as well as making brinjal chutney using herbs and spices. Now my son-in-law cooks, I just eat and say not a word about the taste just in case I get told to cook.
I grew up putting the basil and oregano in the bolognese sauce before a solid hour of simmering… only recently learned that it might not be the best way to do it!
I do tend to be more of a “Spice Girl” with cooking. I have definitely added too much Oregano in a couple of dishes. I have learned that less is more when using dried herbs.
Oh gosh, I love cooking and trying new flavors. I have over cooked herbs adding them at the wrong time. I have burnt things and tried to fix them with “seasonings”….I’ve done it all lol
I just use any herb or spice available in the kitchen not even knowing whether it’s a good combination or not .
I need to learn more about which herbs to add and when to add them for now I just add whenever not paying too much attention as to how it will have an effect on flavour.
I definitely get in a rut with my “go to” spices. Have definitely gotten remarks about “twigs”! And have definitely added herbs at the wrong time. I think of myself as a pretty good cook, but I’m excited to take it to the next level!
Since I cook with herbs and spices I don’t think I break any of these rules too often. If anything I have a tendency to make things spicier than my husband can handle because he has ulcerative colitis.
I tend to add the fresh herbs in too early and they lose their flavor under the heat. Basil, parsley etc. So I need to work on that. I’m Looking forward to the cheat sheet.

One should never think you know what needs to be known there is always more to discover, creating better combinations and getting the timing perfect.
#2 process is everything too much of powdered herbs can be overwhelming

Incorrect proportions of herbs. I use powder often and I am inclined to be heavy handed.

Need to mix things up a bit. I have bad habits of using same spices/seasonings for most everything.

I ended up in a rut, using the same old stuff, having everything taste the same every time. Urgh
I guess I have to say that I have been “too scared to dare”.
I’ve grown up with herbs in everything, even my shampoo! But I’ve still overdone it on occasion

The thing I come closest to mistaking is adding it too early. When in doubt, err on the side of adding them late.

Combining the wrong herbs
I genuinely hate wasting food so I tend not to add herbs and spices even though I have a plethora of them.
Adding the herbs in to early, I have done this. I love cooking and through trial and errors over the years I have learned this lesson.
Not adding enough herbs to a meal as I am afraid the tast will be overwhelming
Disaster #1 is my most disaster. I’m not a cooker, because I am too scared that people will not like it.
Definitely putting herbs in too early would be one.
